Question on excel formula and functions for individual cell attributes

Hello,   Can anyone help me with this excel question.   Is there an excel formula that I can use that would help me count a specific attribute within an individual cell?   For example:   a_b ...

A variant if you're using 365:

=LET(split,TEXTSPLIT(A1,"_"),COLUMNS(split)-1)
