Do you mean Monday OR Thursday? If so:
=T25+CHOOSE(WEEKDAY(T25),1,0,-1,-2,0,-1,-2)
Or Monday to Thursday? If so:
=T25+CHOOSE(WEEKDAY(T25),1,0,0,0,0,-1,-2)
