Excel on Mac
I just upgraded to the latest version of Excel 16.72 from I think it was Office 11. And quite frankly, I hate it. My main issue is that it is cumbersome compared to my previous version. My biggest gripe is the ribbon and tool bars. Why do I have to keep switching tool bars to use a workbook? I used to be able to have toolbars stacked across the top of a single window and easily control their content. Here, I can't even add my familiar +,-,*,/,= buttons to make formulas easy to write.
The ribbon also is nearly unreadable because the icons are so small and close together. I loved the previous version.
Now that I have vented, it has been building up, is there any way, tutorial, to personalize the tool bars to make them more user friendly or even add buttons in addition to commands.

Hi there. I was an Excel user on Windows like you, now i am using it on Mac and you should know that there are many deficiencies on Mac.
these were my topics:

You can find how to solve your problem is from here.
i assigned my mainly used shortcuts with command key from here. see detailed screenshots below.
You can check here when you press the shortcuts whether it's assigned or not. And you don't have to put them in quick access toolbar after you assign shortcuts. in windows they have to stay in quick access toolbar to use them with ALT key.
However i couldn't find some shortcuts, for example i couldn't put filter selected cell values from quick access toolbar.
