Figured it out! This is the formula to use
=DATEDIF([@[Start Date]], [@[End Date]],"d")+1
Not the =date360 or whatever the template came with :) Yayyy!
Update, it seems that it's only doing this on the 30th of certain months. Below is a snap shot of it.
