How can I create a SharePoint list where I can retain the data that was in a item column field after it has been changed.

@irwinck you would need to do this with a flow in Power Automate and then save the previous value into a column in your list. Details of a flow that can do this are at https://dev.to/thebernardlim/power-automate-get-previous-value-of-updated-sharepoint-list-item-1kcb
