Is it possible to secure a library list at the field level?  A security group can edit certain fields, but only view others,  whereas another security group can edit all fields?

Permissions cannot be set on a field level on SharePoint by default.

There is third party solution, which might help you with this requirement. Solution supports hiding and disabling fields based on user and/or SharePoint Group.
