Extracting uploaded PDF documents texts in Sharepoint to SQL Database

We have a requirement from a customer who wants to start using Microsoft 365 to automatically extract information from PDF files sent to a Teams channel, into a SQL database (or other database compatible with power BI). The goal is to have a power BI dashboard integrated into Teams where the customer can easily find the information they need for management purposes from that PDF. Examples of such PDFs are invoices, resumes and CVs. For example, a use case is to look up information about how many employees have "power bi" skills (mentioned in the resume).

I have read that files uploaded into a Teams channel are stored in SharePoint. SharePoint has the ability to extract PDF text using OCR, if I am not mistaken.
