I am new to office 365 admin, can I get suggestion on the best practices for guest access on MS Team.

Also the policies to define for guest access.

Hi there.  Requirements for this will differ between organizations and will depend on internal policies along with applicable industry standards.  I'd advise you to review https://docs.microsoft.com/en-us/microsoft-365/solutions/collaborate-as-team?view=o365-worldwide which shows the many options for configuring access for guests within Teams.  This should help you decide which options work best for you.
