If it could help somebody else I summarize here the solution for above issue.
After conversation with MS Support I've got three points:
1. My Default Scheduling Policy setup is correct, general and custom availabilities.
2. All services published must have activated the Default Scheduling Policy. Services with DSP not activated will remain bookable without taking care of the custom availabillty fixed in DSP and the day appears as boobable in the calendar.
3. Changes in DSP (or changes in general) take some time (even minutes) to propagate through MS cloud. When you are testing and developing you can think that Bookings is not working.
