I use Outlook on my surface pro tablet and couldn't find any way to do this.  I finally just deleted the signature and re-added it.  The new signature didn't have the box selected.

I just had this issue in new Outlook, while it was working as expected on Outlook Web. For some reason I had to go to Settings->Calendar->Bookings with me, from where I could follow the link back to the "add the link to your email signature." Then it was no longer greyed out.

FYI - if you go to your "Bookings with me" page (https://outlook.office.com/bookwithme/me) and click the drop down on "Share" and select "Email signature settings" you get the same screen as shown in Outlook (new desktop client) but the option to include the link in your signature is actually available.

Exactly the same issue, not sure how to resolve - OP has nailed the description.

For reference we do have a business wide Auto-Sig set up, but I still have the flexibility to add my own manual signature which works and appears above the work Auto-Sig.

I am the only person with a bookings page in the business so not been able to test other users etc.

No idea if this is part of the issue but may help someone troubleshooting.
