We have one email sent for all employees , how to tracking how many employees open email ?

To track how many employees open an email sent to all employees in Microsoft 365, you can use the following methods:
Method 1: Use read receipts
To use read receipts, you need to enable them in your Outlook settings. Once enabled, you can request a read receipt for any email you send.
To do this, click the Options tab in the New Message window and check the Request a delivery receipt box.
Once you have sent the email, you will receive a notification when each recipient opens it. The notification will include the recipient's name and the time they opened the email.
Method 2: Use Microsoft 365 message trace
Microsoft 365 message trace is a tool that allows you to track the status of email messages sent and received by your organization. To use message trace, you need to have an Exchange Online administrator account.
To track email opens using message trace, follow these steps:
The message trace results will show you the status of all email messages that match your search criteria. The message trace will show you whether the email was opened, read, or deleted.

From client side:
Click the File tab.
Click Options.
Click Mail.
Under Tracking, under For any message received that includes a read receipt request , click one of the following options:
Always send a read receipt
Never send a read receipt
Ask each time whether to send a read receipt

Sorry, but my info was not correct.
With message trace in Exchange Admin Center you can see if the messagge was recieved (delivered), but not if the message was opened or read.
