Excel for Mac on iPad Pro

Don't have an iPad Pro but in case it's  the same on an Excel for iPhone. Try this:

Select the cell(s) you want to  format;

Select the three dots at the bottom right;

Scroll and select "Number Format"

Select "Number" and press the "(i)" next to it;

There you can select your number style.
