I used [separate pages] on the web version by accident and now a bunch of my text is gone
I used Show/Hide to see what was going on and a large chunk of my text was replaced by these arrows.
Is there any way of undoing this and getting the text back?

The series of arrows is tab key presses.
It is likely that you had the missing text selected when you pressed the tab key.
When editing, the tab key does not jump windows or pages, it enters that character in the document, overwriting anything that is currently selected.
If you were editing in the web app, you can open it separately in OneDrive and check to see if any versions have your missing material.
It appears you were working in Microsoft Word or a comparable word processing application and may have inadvertently activated the “Separate Pages” layout or inserted a section/page break, which altered the structure of your document. The arrows you are seeing (→) are most likely tab characters or formatting symbols that become visible when the “Show/Hide ¶” option is enabled.
