Windows 11 Taskbar Resizing Issues

Having an issue where my taskbar on my right most monitor (see layout below) will randomly gain height when connecting / reconnecting monitors. Along with this, the display colors can randomly increase & decrease in gain - brighter colors get completely blown out and darks become even darker. I have not been able to find anyone with a similar issue, so I'm wondering if this is just a new bug?

I know all the options for manually adjusting the taskbar height have been removed in W11, so I'm confused as to how this is even happening.
