Windows 11 Registry Changes

Good day,

I want to change the Windows 11 Registry, but can't find a detailed book explaining the registry.

I am having a problem because I accessed the company I used to work for remotely. I had to log in using my Microsoft credentials for the company. I was also signed in using my personal Microsoft credentials. When I try to make some changes to Windows (Apps > Advanced app settings), I am requested to sign in using my old company's credentials. It does allow me to change the login credentials to my credentials. I scanned the register and found several instances of my old company's ID. I want to delete them, but I am unsure what effect this would have on my system. 

I need a tech journal or book that explains the registry in detail. 

Can someone point me in the right direction?
