Possible to manually backup windows 11 profile to new computer?

Just manually copy your entire user profile folder, which contains your documents, app data, and other settings, to an external storage device and then transfer it to the new computer.
Step 1: On your old PC, open File Explorer and navigate to C:\Users\<Your Username>.
Step 2: Copy the entire user profile folder (including Documents, AppData, Pictures, etc.) to an external drive.
Step 3: On your new computer, paste the copied user profile folder into the same directory (C:\Users\<Your Username>).
