I also encountered the same problem after upgrading to Windows 11. The built-in tool could not record audio well. Later I used Aiseeesoft Screen Recorder, which not only has high video quality, but also excellent audio recording and is easy to use. It helps me a lot in making presentations and tutorials at work.
