Yeah, this bug’s been around for a while — Windows sometimes re-adds “Greek-Latin” automatically after sync or reboot. The most reliable fix is to disable language sync, remove it via PowerShell (Remove-WinUserLanguageList), then reboot — it usually sticks after that.
