Why can't I group by for columns formatted as Choice with multiple entries or with custom ones?

Why is it not possible to do a "group by" on a column when the formatting is "choice" with multiple selections or custom entries? I would think this would just be a matter of seeing what is written and putting those into unique buckets kind of like when you hit the "filter" drop down in excel and can see all the unique entries in the column.
