What is going on with LISTS?
All of the sudden, one of our SharePoint Lists has completely changed its appearance and function. It has more of the new list style now. We have to change this back to retain its functionality immed...
I am struggling with this change as well. In my case, when a SharePoint list displays like a Microsoft List the Gallery layout option is not available so my JSON formatting no longer works.
I tried forcing the list to display in SharePoint as suggested at the URL below, but the SharePoint List still displays as a Microsoft List. Also, on the same SharePoint site some lists display as a Microsoft List and other lists display as a SharePoint List.
Quite frustrating indeed.

- Workaround:
In order to get the "Gallery" view option back, create a new Page and add the List view webpart. Configure the webpart and select your desired List. This should display the usual List ribbon (SharePoint List UI). Now you can create a new view as a Gallery and Save it. Navigate to your List from Site Contents and your newly created "Gallery" view should be available there and you can apply your formatting as usual. Hope this helps.- AskSaurabh

Regarding "Gallery layout option is not available" issue please note that the Gallery is now available as a View. To setup Gallery view, click on "+ Add view" and select Gallery. Hope that helps.
