Subsites per Site Collection in SharePoint Online

I think that you may need to read that page a little bit closer. It is actually providing a recommended maximum number of subsites, it is not a hard limit, but something that should be consisered when designing a site collection.
If you exceed this recommendation you may start to see issues with some of the UI elements that need to display the list of subsites.
In general, SPO is optimized to scale by adding more site collections instead of adding more subsites.
Agree with Dean...indeed we could say that same software limits you can read for SharePoint 2013 / 2016 should be applicable to SPO...by the way do you think you need to create more than 2000 subsites under a site collection?
