Stuck asset Library - unable to remove
We did some testing for proof of concept and marketing loved it
However now the asset library won't remove itself so we can't move it to the site we need it to be on :(

DannyBau do you understand what the organization asset site and its libraries are for? You are saying that you did it for a test and now you want to move them. That's not how they work. You only get ONE organization asset site in your tenant. You can only enable an organization asset library in that one site and no others. This is also the same site where the Brand Center assets are stored if you utilize the Brand Center for your sites as well as the Brand Center assets for Clipchamp. And, of course, the Office templates that can be made available to all users of any Office application in your tenant are stored here also.
The idea is that this site will house those libraries that provide themes, branding info, (and Office templates) to all SharePoint sites (users) in the entire tenant. Once you set this up, it cannot be changed. (Not to my knowledge anyway and I've been using them for several years now.)
