Sharepoint Permission
I want to set a permission that enable users to edit content without also allowing them to modify the folder. So users can only upload and edit documents but cannot create nor rename nor delete a folders.

A folder is an item and permissions out-of the box apply to all item, so i don't think it's possible.
What you can do to achieve it is to use metadata instead of folder to organize your content. Then you can modify the permission to prevent the delete (copy from "contribute" role and remove the delete options). With the metadata (with a termset or choice/drop down), your users can't edit/delete the metadata unless site owner/term set contributor
