Hi Marc,
I was looking at the Service issues today on the M365 Admin Centre and it appears to be an existing issue. https://admin.microsoft.com/AdminPortal/home#/servicehealth/:/alerts/SP702280
(I've attached a couple of images for those without access to M365 Admin Centre).
I sent this to Microsoft Engineers assisting us with the ticket we raised on this and they said this is likely to be the case.
Apparently they're expecting it to be fixed for 8:30PM today (GMT), so I guess we'll know tomorrow if that's the case.
Fingers crossed.

CCChris_Martin I also have a ticket open with Microsoft. Sent them all they have required to diagnose the problem. I'm waiting patiently.
I did change the configuration ont the site that was critical so that my users can continu working, but I will not revert all our sites.
- CCChris_MartinJan 18, 2024Brass ContributorWe were fortunate to be in a position where users were quite new to SPO and so were open enough to alternatives. We suggested having a folder saved locally withM365 file types in it and uploading them to site when needed.
Opening all documents in browser wasn't viable as a lot of our users would lose functionality there, and while we gave instructions on how to open to the Desktop app from there, to change how files open so soon after a migration (weeks for one group) could cause far more harm than the alternative.
THAT SAID!
It looks like the issue has been fixed.
As of yesterday morning, we were able to Create docs again using the "New" button.
I hope it is the same for you.
