Not necessarily out of the box, but in about 15 minutes, you could use JSON in a text field SharePoint Calculated Column to Extract Email from Person Field [using JSON] - Enjoy SharePoint.
I have started a library of these JSON scripts that I go back to all the time - so in the future, it will take you 2 minutes to do something like this.

Thanks, but it's the Form that you access at the top of the list that I'm trying to edit rather than the list.
