Lee-Martin Yes, you can limit the selection of users in person or group column using this functionality.
This functionality only supports SharePoint groups. So, you have to create a SharePoint group and add users to group.
When you will set this SharePoint group under "Choose from" option in column settings, user will be able to search & select the members of that particular SharePoint group only.
