sounds you had implemented customizations or flows. Have you also create a custom form or Power App? Check the item level permissions, it's possible, that you stop the permissions on item level.

There is customized code on the list that was created before I started with my company, but it only recently became an issue. The permissions for the list items are normal. The department who uses the list can create an item but once that information is saved, you can only edit in grid view. I really would like to recreate the list with proper flows.
ok that's a answer, so you need to analyse and fix your customized code, i think after that, your list will work fine.
