I'm also having this issue. Just noticed it within the last week. Don't think this is related to any configuration on my end as I am seeing it happen in the canned helpdesk template as well as another list I created. Another user that has access to this list can see everything. I am also unable to enter in new list items, getting the error: Error: The server was unable to save the form at this time. Please try again. I reset my edge browser then can enter in a new item. The items that were disappearing are also visable again. Once I navigate away or refresh the problem comes back.
Only way I was able to resolve the issue was by deleting my windows profile and re-creating.
