i have the same issue with the new outlook. The link is in Outlook, SharePoint have no impact to a inserted link in Outlook, i think, it's an issue in Outlook. I am also waiting for a solution in Outlook, i think, that will reach us.

I raised a case with the Microsoft and after many weeks of supplying videos and logs, this is the rsponse:
"Kindly note that the issue reported on this ticket is by-design as of now. The Exchange team have shared the feedback with Product group and its under their radar. Currently we do not have an ETA from them as fix depends on lot of factors."
I don't hold much hope of the functionality being restored.
