Sharepoint calculated column problem (changes date format)

Rickytruco it sounds like the regional settings for your site are not set properly. You don't need to be a global SharePoint admin to change this but do need to be an owner of the site. Go to the gear icon in the top right and select Site Information and then select View all site settings. Then in the Site Administration section select Regional settings.
In the Regional Settings screen select your time zone and locale:
