Ey Dean,
Then, one server is not enough...If you depoloy SP 2016 FP2, you will be able basically to deploy the architecture you have described here: https://blogs.office.com/2016/09/26/announcing-feature-pack-1-for-sharepoint-server-2016-cloud-born-and-future-proof/ (Application with Search seems to be the option for you)

I think he means FP1 :)
But you'll need Dist Cache whether you want it or not, so you must go the Custom route for a 2 node farm.- Dean_GrossApr 28, 2017Silver Contributor
Trevor Seward why would we need a Dist Cache server in a Search Farm?
BTW, I bought your book and chapter 3 is awesome. I have never seen so much detail about server configuration in one place. Your explanations and rationale are very well done and will be extremely helpful when I have conversations with my clients.
