to remove the "All Activity" section from a SharePoint list, you can try this:
Edit the Page:
If you're referring to the Activity web part on a modern page, you can easily remove it. Simply click "Edit" to enter the page editing mode, then use the remove button to eliminate the web part. Don't forget to publish the page to save your changes.

- AFAIK, the activity section he is referring to cannot be removed in any way. He is talking about native lists UX, no the lists WebPart
