Quick Edit no longer displaying Theme correctly

Previously when using Quick Edit, upon selecting a cell, the selection's fill would display per Theme colors (in the example below, in dark blue). Now, it is just defaulting to a pure white fill upon selection. This makes it impossible for the user to see choice selections in our case, as the Theme font is white.

This seemed to happen within the past 2-3 days, indicating it was caused by a recent update on Microsoft's side.
