Modern experience - Quick Launch displaying Pages link?
You can't right now but I bet they will add that feature in based on our feedback. I think they still have quite a few little settings to iron out before full launch. I don't even think you can remove the quick launch at all right now either.

Things like this make me so annoyed with Microsoft's approach to updates. It just appears one day with no way of removing it or explanation. But I have to explain it to my users. Especially annoying on one site where the Site Pages library doesn't exist so it's a broken link..

I am definitely sharing your frustration. Due to the lack of consistency in the Modern Experiences I have to turn it off completely as well. At the same time, I need to keep apprised of the changes so I have acquired a developer account only to find that initially it was on a different version than my tenant. After a week they ended up finally being upgraded to the same version. I started seeing some bugs on my Developer Test Site so I spun up another developer test account only to find that it is on yet another version ahead. Unfortunately they all still have the same issues (ie. Pages link in document library quick launch). It sure would be nice to know when these "Experiences" will become GA and stabilize so that I can test them. They have some great capabilities that I would like to offer my customers but I can't do that with a solution that seems to be so fragmented.

This is a big part of why we have most of our "modern" stuff turned off (modern libs, lists, groups, etc), at least until the dust settles and things normalize.
I can barely keep up with Microsoft, I can't imagine all of our users trying to.
Things are literally changing every day, and several features have just been pretty inexplicably left out that they are now having to go back and put in.

At the moment I'm avoiding suggesting SharePoint as a solution where I can. I dont know what it's final form will be so selling it to users is difficult when you dont know what features will be available.
I would like to turn it off fully (I have turned it off individually for a lot of lists/libraries) but I'm worried that if I do, how could I ever turn it back on again? Small changes I can look into but turning all this stuff on at once to all sites would cause such a headache.
For me, it would be ideal if you could turn it on/off per site collection.
