Migrating SharePoint on-prem to SharePoint cloud

When migrating from SharePoint On-premises to SharePoint Online (SharePoint cloud), 3rd party products in general provide the beste experience. ShareGate, Metalogix and AvePoint are big players providing 3rd party migration tools. You should check their websites but there are lots of blogs out there comparing the products.
Microsoft also provides a Migration Tool, I have no experience using it and I actually don't know if SharePoint 2007 is supported

Apologies for stating the obvious but it is well worth while deleting and archiving what you can before migration. Backup everything to a safe location for your existing SP2007 environment.
You don’t state where your org is on it’s overall Office 365 journey but resources such as FastTrack can be beneficial. Make sure your AD structure is clean and work with your Global Admin (if that’s not you) to plan everything out.
Consider a test tenant so you can evaluate features and take advantage of working with new features before they enter production. Good luck Thomas!
