you can use the highlighted content Web Part to rollup informations/documents/items, but no customizing available...

Thanks for your further advice. Maybe one last question: A workaround could be to inherit the metadata to the subfolders and the documents within them.
Do you have an idea, how I can make sure that the existing and new folder do get the metadata?

do you mean the folder default metadata, right? For new folder you can define it...but it's not for existing files:
