there are no specific settings available for the list filter behaviour.

For this scenario we use a custom search page with PnP Modern Search Web Parts https://microsoft-search.github.io/pnp-modern-search/

With the custom search you can use filters, verticals and specific results visualization.

you can use the highlighted content Web Part to rollup informations/documents/items, but no customizing available...

  Thanks for your further advice. Maybe one last question: A workaround could be to inherit the metadata to the subfolders and the documents within them.

    do you mean the folder default metadata, right? For new folder you can define it...but it's not for existing files:
