Dear Eric,
I have the same issue on my laptop (Windows 10+Edge) and the color set stay in blue for all the classical teamsites.
When I tried the same site with IE 11 or FireFox, the customized color and Theme is working well.
It's also only Edge which is doing that

Same here regardless of my color choice Edge is always showing the color blue. Other browsers are showing the correct color.
