Azure ACS Retirement Phased Approach

Microsoft has announced the retirement of Azure ACS, and will officially turn it off in April of 2026. We are running a project to convert from ACS to Entra App. All is going well. What we are wanting to do is selectively disable the ACS apps on targetted SharePoint sites OR selectively turn it back on on targetted sites. Microsoft gives us a tenant level switch to shut it off completely, but that is to impactful.

We have done a lot of research but targetted enable/disabling of the ACS apps does not seem possible?

Anyone else going through a similar migration? Any ideas or lessons learned anyone would like to share?
