SOLUTION: New Outlook removed "switch back to old outlook" button.
I followed the steps, asked the system to switch me back to old outlook and then was asked for my email and password. The response was
"We couldn't log on to the incoming (IMAP) server. Please check your email address and password and try again."
I have tried this with both of my email accounts with the same results.
Did you ever get yours working with Classic Outlook? I'm having same issue. "New" Outlook works fine, but when attempting to switch to "Classic" it gives me IMAP issue you stated above even with the same exact info I've entered to set up the "New".
The smart junk email folder is what is driving me insane, just because I delete an email a couple times doesn't mean I never want to see it again yet I don't want to turn it off completely. And the fact that I can't use a .pst where I like to offload the hundreds of emails my wife gets from stores and such. I absolutely detest having hundreds or thousands of emails in a single inbox and even worse that not having a .pst now means I can't access my old emails that need to be saved.
