New Outlook Editor uses wrong language for Spell Check

I have the same problem. It is very frustrating. Sometimes 2-3 days is OK but sometimes a few times per day change language spell check from Slovak to Czech. Typical Microsoft from last years. Microsoft releases an alpha version and tweaks it as it goes.
