New Outlook Editor uses wrong language for Spell Check

This issue seems like it is affected by multiple users in different Tenants.
Kindly send a feedback to Microsoft about this issue you're experiencing.
In Outlook- Help-Feedback - Give your feedback on the issue with Spell Check. This way, they can check from their end, and resolve the issue.

It seems like after providing feedback from Outlook/Help/Send Feedback, I got contacted by the support within Outlook App and this was suggested (and worked for me):
- I request you to click on the new mail option to compose a new email.
- Once the new mail window is pop up you can see the Options tab in the ribbon, Click on Options tab > Editor > Editor Settings > Click on Manage spell check languages > Add the language > Click on Done.- Yes, this works temporarily. But in my experience, the editor setting soon (within a few days to a week) eventually reverts back to French
