New Outlook doesn't show my name in sent emails, only my email address (IMAP account)

Same problem here. The only way I can fix it in Outlook (office version) is to add a signature explaining why there's no name on the emails I send. Kind of confounding why Microsoft would force people to use technology that doesn't support basic email functionality like this. It's been a headache switching over, because the "new" email doesn't do what I've always been able to do with the old technology (like saving emails on my computer.)
