New Outlook doesn't show my name in sent emails, only my email address (IMAP account)

I believe I am having a similar issue setting up my mother's 'New Outlook' on her laptop. I followed all the conversion steps exactly as instructed. The laptop and her synced iPhone Mail app, which she predominantly uses, now has mail showing to her recipients as from my father. He was the original main account on their AOL emails which were, successfully synced through the Win 10 Mail app until I performed this conversion to 'New Outlook.' So now recipients of my mother will confusingly see his name (but with my Mom's name adjacent in parentheses).
I will try to re-set her Mail app on her iPhone, but I've got a bad feeling about this.
