Create a separate Outlook profile from Control Panel > User Accounts > Mail > Show Profiles > Add.
Configure only one affected company account in the new profile and test composing messages and using signatures.
Do not remove the existing profile, especially if POP accounts are configured, because associated local data files could be affected.
If the new profile also freezes, run the Classic Outlook Advanced Diagnostics troubleshooter from Windows Get Help. It can check the Outlook configuration and suggest fixes for detected issues.
Since Outlook signatures use the AppData folder, also ask your administrator to verify that AppData is not redirected to a slow or unavailable network location.
