Changing to Always Keep... changes all folders
If you have a OneDrive personal account, you cannot customize it the way you want. Also, you are putting your content at risk using this half-baked product. It is just a matter of time before you lose files. Keep in mind that Microsoft is competent in making productivity apps - Word, Excel, Outlook - their core products. However, MS is weak when it comes to cloud computing. Dropbox, Sync.com, and others are better alternatives for cloud storage. Also, Google Workspace is far more advanced in terms of modern cloud services, which I will switch to as soon as my current MS 365 account expires.
I'm not too worried about losing my files. The important ones are also backed up on Google Drive, and two copies backed up one a month to two external drives.

I also have my files backed up on drives and Google. Drive, despite Microsoft's claims, is not really designed to work with multiple computers. Keep in mind that Microsoft is not a tech company. They are a sales and marketing company that buys tech from other companies. Software development is definitely a weakness for Microsoft, which lacks competent engineers who don't have a clue about UI and UX.
