This is unfortunate that you haven't gotten any response as I would like to know how to block this as well.
I found a reddit article that discusses this problem, https://www.reddit.com/r/Office365/comments/170gh1g/removing_readai_from_teams_for_the_entire/ that seems to block my users from adding read.ai app to the tenant but still working on blocking it from joining meetings from other attendees.

Dparrott I also tried adding read.ai to the list of Blocked Domains in Teams. This still allowed the Read AI bot to attempt to join the meeting. Microsoft needs to be able to provide an option to block bots at the tenant level as there are other resources outside of Teams a bot could access. Otherwise, I haven't received any additional updates.

- thekurteichlerMay 13, 2024Brass ContributorI didn't mention I brought this up to the Teams device product group. They quickly said they are aware. A suggested option was to create a meeting policy and disable 'Anonymous users can join a meeting.' Otherwise, I was directed back to my account team to discuss further.
When I tested the Meeting Policy out, users who didn't have a Teams account weren't able to join the meeting without signing in. Without a Teams account, these users wouldn't be able to join at all. The biggest concern was that the bot could still join, so it wasn't being seen as anonymous.
