We got a message on Jan 31st that the default expiration has changed from 60 days to 120 days, but the documentation hasn't been updated since Jan 25th, so it still says 60 days.

That's true. 120 days is the new default expiration period, chosen to give people extra time before Teams removes video recordings. The documentation update will likely arrive before the capability rolls out in late March (see MC274188, published January 31). The delay is because Microsoft is very careful when introducing new features that remove user data...
