Interestingly, I've just tested this myself and found the same thing happened. I received the email invite to my Gmail account, but no calendar item was included.

Hi, was a fix to this issue ever found? I used to be able to see the date/time for MSTeam invites but now can only see the joining details (URL/phone numbers).

I had this issue sending from my Office 365 email to a Google Workspace user, and after doing the username + test @domain.com the meeting did go through, so I deleted my autocomplete in my outlook for the user and then retyped their full email which allowed me to send the meeting to the user successfully. Alternatively, when it wasn't working it was giving the Google Workspace user a .ics file as an attachment, which they could download and import to their Google calendar. Kind of a pain, but if they don't have any control over the sender's side, that allows them to get the meeting in their calendar.
