As far as I know you cannot change the name of the organisation, its linked to an Office 365 tenant which cannot be changed. You would have to setup Teams again.
EDIT: See Adams response below - there is a way to change the name displayed. I would caution that if there is a chance you will take up the paid version of Teams or any other Office 365 services to change the name of the Office 365 tenant now be re-signing up. At the moment you cannot change that but I believe it is on the roadmap.
